RAW FOOD MADE EASY

Wednesday, June 21,2006

Jennifer Cornbleet is the Rachael Ray of raw food. Her new cookbook, Raw Food Made Easy for 1 or 2 People promises to teach you how to make delicious and simple, uncooked, vegan dishes in less than thirty minutes. It's perfect for all those New Yorkers who live alone, have no time, and want to eat a little better without spending much money or making much of an effort. “Everyone wants to find tasty ways to eat more fruits and vegetables,” says Cornbleet. “I want to make it way more fast, easy and accessible. No fancy equipment or obscure ingredients necessary.” Cornbleet, a former high school English teacher, was turned on to raw food cuisine by a college yoga teacher. “It made a huge difference in my health,” she says. “I lost weight, had more energy, clearer skin and I slept better.” For those who picture four sticks of celery sitting on a plate, Cornbleet assures that raw food cuisine can be intensely flavorful and pleasurable. She will be promoting her new book and giving “uncooking” demonstrations all week. She promises free tastes of a healthy flourless chocolate cake with raspberry sauce. Combine “healthy” and “chocolate” and you've got me. (Lisa Gross)
